Hi!
I’m Sandy — a sophomore at Columbia University and the founder of Cookie Rat Co.
I’ve dreamed of opening a cookie shop for as long as I can remember. But a couple of years ago, when I started taking fitness more seriously, I became much more conscious of what I was putting into my body. I wanted cookies that were made with clean, simple ingredients — something I could feel good about eating — without sacrificing flavor.
So I started experimenting in my apartment kitchen, trying to create cookies that tasted amazing but were made with ingredients I trusted. That little hobby slowly grew into Cookie Rat Co., and it’s been the most fun, chaotic, and fulfilling journey.
My dream is to keep growing this tiny cookie brand and, one day, open a Cookie Rat Co. storefront right here in New York City.
